Extra Virgin First Cold Pressed Olive Oil Processing
The step-by-step process (at temperatures up to 26° C)

  1. Olives are picked by hand.

  2. They are transported to the olive mill.

  3. The olives are washed.

  4. They are crushed and mixed with drinking water.

  5. The olives are centrifuged to separate pulp and liquids.

  6. They are centrifuged a second time to separate oil and water.

  7. The oil is analyzed and classified.

  8. The oil is filtered once to remove moisture and a second time for particles.

  9. It is then stored in stainless steel tanks.

  10. It undergoes another analysis for unwanted substances.

  11. The product is packaged for sale.

  12. A third chemical analysis is held, testing at random from the final product.
